Questions: What is American Snow? · How do I cook it?
Pasture-raised American Snow turkey — a hybrid of American Bronze and Broad Breasted White — raised on a farm in Thailand. The birds hatch white (hence “Snow”), roam outdoors eating grass and banana leaves plus high-protein feed, and grow into big, round birds with lots of white meat and a clean, slightly sweet flavour.
Sold raw and frozen, 8.5–10 kg. ฿520/kg. Plan about 4 hours to roast.
How to brine
Boil 2 L water with 2 cups coarse sea salt, 1 cup brown sugar, 4–5 crushed garlic cloves, 2 sliced oranges, 3–4 lemongrass stalks, 1 tbsp black peppercorns, and a few bay leaves. Stir to dissolve, add 6 L cold water, and cool completely. Submerge the thawed turkey and keep cold 12–24 hours. Rinse and pat very dry before roasting.
How to roast a 9 kg bird
Place breast-up at 200°C for 30 minutes, then 165°C for about 3.5–4 hours more (about 4–4.5 hours total unstuffed, or 4.5–5 hours stuffed). Tent foil over the breast after about 2 hours. Baste every 45 minutes. Done when the thickest part of the thigh reads 74°C. Rest uncovered 30–45 minutes before carving.
